Since my youngest munchkin turned one, I have made these little goodies on a stick as part of a Hot Chocolate Bar for her birthday party every year and it’s always a big hit. Now that her 3rd birthday is in a few days, I thought I’d try changing it up and try a new recipe (I know, I’m so last minute!).

Today it’s a mild 104 degrees outside (dripping/sweating in sarcasm) so as much as I would have loved to load up the munchkins in the sweltering heat and truck on over to the outdoor farmer’s market, I just decided to stay indoors and frantically dig around my kitchen for something to post about share a dessert I’ve been planning for weeks.

What I almost always have in my refrigerator is fruit. So let’s just pretend these beautiful organic strawberries came from the farmer’s market instead of Safeway.

I also found greek yogurt in my fridge. I immediately knew what I would do for you all (considering how hot it is outside)…

Frozen yogurt! And fresh strawberries (or any other fresh fruit for that matter!) is great with the yogurt.

Not just any frozen yogurt, but Pinkberry style frozen yogurt (tart with just a hint of sweetness – a frozen yogurt that actually tastes like yogurt that has been frozen).

Let’s take it one step further. There’s only a little over 110 calories per 1/2 cup serving. 130 if you include the fresh sliced strawberries.

What? You’ve never heard of a fruit basket cake? Believe me, I had no idea what it was myself until I moved to Sacramento and worked at a bakery. But ask anyone from Sacramento or the surrounding areas what a fruit basket cake is and chances are you’ll get a resounding “OHMYGOD I LOVE THAT CAKE!”

Essentially it is a white/yellow cake filled with fresh fruit and iced in whipped cream. Simple, classic, and oh so delicious.

Many bakeries do it differently, using different fruits. It is a cake I’ve done more times than I can remember, but until I started working at the local bakeries, I never knew there was an actual name for it. The fruit basket cake is by far the most popular cake at any bakery I’ve worked at. Fruit Basket Cake Recipe | At the bakeries where I’ve worked, it is usually filled with strawberries and bananas, but you can definitely substitute the fruit with whatever fruit you prefer. I’ve used blueberries, pineapple, kiwi, and mandarin oranges as well!

It’s probably the closest thing to a guilt-free cake you’re going to get. A client of mine even ordered this cake for a special breakfast treat once! – Cake for breakfast? I’m in!

I owe you guys a cheesecake recipe for this month’s post for The Cheesecake Project. But what’s better than cheesecake in the summer? Homemade Cheesecake Ice Cream! The best part is, you don’t even need an ice cream machine/maker!! Excited yet? I know I am!

I’ve long been tempted to make homemade ice cream, and not just any ice cream, but one of my favorite flavors: plain cheesecake ice cream, like the one at Cold Stone Creamery. No strawberries and no chunks of cheesecake folded into vanilla ice cream.

There’s just one problem: I don’t have an ice cream maker/machine. So instead, I ended up going to the store to buy a container of ice cream (though, not the flavor I was really craving).

My little munchkins love blueberries more than any other fruit in existence… and that’s great, you know, antioxidants and all. Fortunately and unfortunately, my entire family knows that.

This past week, we were given several giant containers of organic blueberries by various family members: 3 lbs total to be exact (in addition to the 2 pints we already had at home from the farmer’s market)!
